happy friday! i woke up to sunshine & blue skies this morning. aka the most perfect day for a sunshine toast brekkie. {sunshine toast is an easy and fun twist on the standard eggs & toast.} i decided to fry up a veggie sausage patty, as well. yum!
sunshine toast.
ingredients:
- olive oil & butter
- one slice any sort of bread
- cookie cutter
- egg
- salt & pepper to taste
directions:
- heat up a tablespoon or two of olive oil in a medium sized pan.
- using a cookie cutter, cut a hole in the middle of a slice of bread.
- butter both sides of the bread, {including the extra bit,} and toast in pan.
- flip bread over and crack the egg directly into the hole.
- season with salt & pepper and finish cooking until the egg is set how you like.
- serve with toasted cut-out.
